It's time for salads again. It's too hot to eat anything else. This Tomato and Avocado with Cucumber Salad is perfect since the avocados provide healthy and filling fat.
Ingredients
- 2 avocados
- 1/4 cup chopped cilantro
- 1 English cucumber
- 1 1/2 tbsp lemon juice
- 2 tbsp extra virgin olive oil
- 1/2 medium red onion
- 1 lbs roma tomatoes
- A pinch black pepper
- A pinch Sea salt
Directions
- Chop all vegetables and place in a bowl.
- Drizzle with the olive oil and lemon juice.
- Toss gently to combine.
