Swedish Shrimp Sandwiches Recipe

Dear Daughter,

Iā€™m going to document all of our family recipes here for you as well so that you have them handy in the future.

As you know, Swedish Shrimp Sandwiches is one of my favorite dishes and one of the dishes I miss the most from home. You will find them at every coffee shop in Sweden, as well as a lot of restaurants. Growing up in Sweden, granddad and I had them every Friday night. It was our Friday mys tradition. It was a great way to kick-off the weekend. I enjoyed making them with granddad as much as eating them later. Granddad would peel the shrimp and I would make the sandwiches, as we were talking about the past week and planning for the next.

The sandwiches are fancy, yet easy to make. They also make great appetizers, so these are a good option for parties.

The photo below shows modified shrimp sandwiches. I took out the bread to make them a keto recipe. This dish includes protein (shrimp and egg), fat and lots of vitamin C from the lemon.

The original recipe in order of ingredients:

  • Bread (toasting bread is great. Switch out the bread for lettuce to make it keto).

  • Butter to spread on the bread.

  • Sliced boiled eggs

  • Shrimp (The shrimp at Ikea are the same as the one we have in Sweden. Small and flavorful). Place the shrimp on the eggs.

  • A tiny pinch of salt on the shrimp

  • Mayonnaise

  • Fresh dill

  • A slice of lemon

Enjoy!
