Another great recipe that only takes 30 minutes to make - Southwest Pork Chops with Corn Salsa. To make this recipe LCHF, I eat the pork chops with a green salad instead of the corn.

Ingredients
- 4 center-cut pork loin chops, cut ¾-inch thick
- 1 8oz can whole kernel corn
- 3 tbsp white wine vinegar
- 1 tbsp fresh cilantro
- 1 tsp olive oil
- 3 plum tomatoes
- ½ cup green onions
- 1 small jalapeno pepper
- 2 tbsp fresh cilantro
- 1 tbsp white wine vinegar
- 1 box couscous
Directions
- To make the sauce, combine the white wine vinegar, cilantro and the oil. Set aside.
- Snip the fresh cilantro in small pieces.
- Chop the tomatoes and set aside.
- Slice the green onions.
- Seed and chop the jalapeno pepper finely. Be careful when handling the pepper and make sure you wash your hands well with soap afterwards.
- In a medium bowl, combine the corn, tomatoes, green onions, jalapeno pepper, cilantro and the 1 tablespoon white wine vinegar. Stir and set aside.
- Cook the couscous according to the directions on the packaging.
- Trim the fat from the chops. Cook the chops on a grill or in a grill pan until fully cooked brushing them occasionally with the sauce.
- Serve with the couscous.
