Jansson's Temptation

Dear Daughter,

I can’t forget to give you the recipe to one of your favorite dishes on the holiday Smörgåsbord - Jansson’s Temptation, or as we say in Sweden - Janssons Frestelse.

Janssons Frestelse/Jansson’s Temptation

Ingredients

  • 2 large yellow onions

  • 1 kilo potatoes

  • 1 can anchovies, save the liquid

  • 2 dl heavy cream

  • 1 dl whole milk

  • Breadcrumbs

  • 2 tbsp butter

Directions

  • Butter a pan and set aside

  • Slice the onions thinly and fry them on low heat until caramelized. Set aside to cool.

  • Peel the potatoes and cut them into thin strips.

  • Pre-heat the oven to 390 degrees

  • Layer potatoes, onions and anchovies. The first and last layer should be potatoes.

  • Pour the liquid from the anchovies can over the the casserole.

  • Pour the cream and milk over the casserole.

  • Place the butter on top of the casserole (see photo below) and sprinkle over the bread crumbs.

  • Place the casserole in the oven and bake for 30-40 minutes or until the potatoes are soft. If the casserole needs to bake a little bit longer, place a sheet of tinfoil on top of the casserole so that it doesn’t burn.
