Dear Daughter,
I can’t forget to give you the recipe to one of your favorite dishes on the holiday Smörgåsbord - Jansson’s Temptation, or as we say in Sweden - Janssons Frestelse.
Janssons Frestelse/Jansson’s Temptation
Ingredients
2 large yellow onions
1 kilo potatoes
1 can anchovies, save the liquid
2 dl heavy cream
1 dl whole milk
Breadcrumbs
2 tbsp butter
Directions
Butter a pan and set aside
Slice the onions thinly and fry them on low heat until caramelized. Set aside to cool.
Peel the potatoes and cut them into thin strips.
Pre-heat the oven to 390 degrees
Layer potatoes, onions and anchovies. The first and last layer should be potatoes.
Pour the liquid from the anchovies can over the the casserole.
Pour the cream and milk over the casserole.
Place the butter on top of the casserole (see photo below) and sprinkle over the bread crumbs.
Place the casserole in the oven and bake for 30-40 minutes or until the potatoes are soft. If the casserole needs to bake a little bit longer, place a sheet of tinfoil on top of the casserole so that it doesn’t burn.
Serve and enjoy!
