LCHF and Clean Eating recipe - Grilled Chicken with Rice and Mint Sauce

Time to fire up the grill! This chicken dish is perfect for a busy week since it's only takes 30 minutes. It's also a delicious and nutritious meal everyone in the family will enjoy. Switch out the rice for a salad, and skip the nectarines to make the meal LowCarbHighFat.

Grilled Chicken with Rice and Mint Sauce

Ingredients 

  • 4 chicken breasts
  • 4 nectarines
  • 1 tbsp olive oil
  • Lettuce
  • 2 tomatoes
  • Cucumber
  • Brown rice

Sauce

  • 1 cup of Greek yogurt
  • 2 tbsp mint leaves
  • ½ lemon   
  • ½ tbsp of honey
  • ½ tsp salt
  • ½ tsp pepper

Directions

  1. To make the sauce; Pour the yogurt into a bowl. Chop the mint leaves and add them to the yogurt. Press the lemon juice out of the lemon and grate some of the lemon peal off. Add the honey, salt, pepper. Mix all the ingredients. Place in the fridge until it's time to serve.
  2. Chop the tomatoes and cucumber and mix with the lettuce in a bowl for serving.
  3. Put on the rice to cook following the directions on the packaging.
  4. Flatten the chicken a little using a mallet.
  5. Half the nectarines and remove the seed.
  6.  Brush the chicken and nectarines with oil.
  7. Sprinkle the chicken and nectarine with salt and pepper.
  8. Grill the chicken and nectarines in a grill pan or on the grill (about 3 minutes on each side or until done).
  9. Serve chicken, nectarines, sauce and salad.
