The benefit of eating rosemary

Rosemary is an herb used to flavor meat, poultry, vegetables, seafood and baked goods. Its great for sauces, soups and tomato-based dishes. I always use it when I cook lamb, and oven roasted potatoes. I love the pine-like flavor.

I've had my rosemary plant for years now. I tried to plant rosemary outside many times, but the plants never survive the winters in Massachusetts. So now I have a large rosemary shrub in a big pot that I keep inside in the winters, and I move outside in the summers. It keeps on growing!

Fresh rosemary will add more flavor when you are cooking, but dried rosemary actually contains more nutrients. Rosemary is a good source of a variety of essential nutrients: vitamin A, iron, calcium dietary fiber and folate. A good way of storing fresh rosemary is to put some in ice cubs tray with some stock. That way you will always have some handy when cooking, and you also don't waste rosemary if you don't use it all at once when you buy it.

Great ideas for rosemary

  • Sprinkle some fresh rosemary on potato wedges with olive oil and salt, and bake in the oven
  • Add fresh rosemary to omelets
  • Add rosemary to tomato sauces and soups.
  • Chop the rosemary up finely and add it to some olive oil with garlic and salt. It makes a great dipping sauce for bread
  • Tie a ribbon around some rosemary twigs and hang it up in your kitchen as natural air freshener
