Seaweed avocado salad

Dear Daughter,

 Here is the recipe for dad's seaweed salad. A must have. I’m not sure you remember, but this recipe was inspired by a dish in our favorite sushi restaurant. This can be served as a side dish, or the main course. I love having this salad for lunch, since it’s light but filling. The seaweed, avocado and salmon are packed with vitamins and minerals, so it’s really a power lunch.

Ingredients

  • 1 package of frozen wakame seaweed

  • 2 avocados

  • 8 oz sushi salmon or cured salmon

  • 1 tsp Thai chili garlic sauce

  • 2 tbsp mayonnaise

Directions

  1. Thaw the seaweed and squeeze out the water using your hands, and place in a bowl

  2. In a separate bowl, mash up the avocado (can be smooth or chunky, depending on what you prefer)

  3. Add the sauce and mayonnaise to the avocado and mix well

  4. Cut up the salmon in chunks and add it to the mixture

  5. Add the seaweed and mix

  6. Serve and enjoy!
