Low carb seed crackers

I wanted to share one of my favorite recipes - Low Carb Seed Crackers. It's flavorful and super nutritious. My favorite topping is butter and cheese (like an open-faced Swedish sandwich), but it's also good with jam or deli meat.

Low Carb Seed Crackers

  • 1 1/4 cup sunflower seeds
  • 1/2 cup flax seed
  • 1/4 cup sesame seed
  • 2 tbsp psyllium husks
  • 5 dl water
  • salt
  1. Blend all the above ingredients in a bowl, and let stand for 10 minutes (the seeds and psyllium husks will absorb all the water giving it a thick texture).
  2. Pre heat your oven to 170ºC
  3. On 2 baking trays with baking sheets, spread the mixture as thinly as you can, use a spatula or back of a spoon to help even it out. You don’t want there to be any holes.
  4. Place your baking trays in the oven for 60 – 70 minutes, or however long it needs for the mixture to get hard and crispy. Keep an eye out for burning.
