LCHF and Clean Eating recipe - Pesto salmon kebabs

Take every opportunity to grill before it gets too cold! These Pesto Salmon Kebabs are a great option to just regular grilled salmon. I got so tired of grilled salmon for a while that I couldn't eat it, but these are very flavorful and also easy to make, so now I'm back to eating salmon once a week.

Grilled Pesto Salmon Kebabs
Serves 4

  • Prep Time: 20 minutes
  • Cook Time: 5 minutes

Ingredients

Pesto

  • 1 cup packed fresh basil
  • 1/2 clove garlic
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Salad

  • Salad with spinach, tomatoes, cucumber and red onion
  • Sprinkle with olive oil and sea salt

Skewers

  • 1 pound salmon filet, skinless
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Directions

  • Wash the basil and place it in a food processor with the garlic.
  • Process on high until well blended.
  • Add cheese and olive oil and process on high again until a smooth paste forms.
  • Add salt and pepper to taste.
  • Cut 1-inch pieces of salmon and thread onto skewers.
  • Drizzle the salmon with olive oil and add salt and pepper to taste.
  • Make the salad and set a side.
  • Place the skewers over a medium-high grill.
  • Grill for 1 minute on each side or until cooked.
  • Remove from heat and spread pesto on salmon.
  • Serve the salmon with the salad
