LCHF and Clean Eating recipe - Baked zucchini with Parmesan

Another healthy and quick option for dinner. This dish only takes 30 minutes to make, so it's perfect for those busy evenings. This is a great vegetarian meal, or a great dish to serve with a steak.

Ingredients

  • 4 medium firm tomatoes
  • 4 medium zucchini
  • Salt and pepper to taste
  • ½ cup almond flour
  • ⅓ cup grated/shredded parmesan cheese

Direction

  1. Pre-heat the oven to 350 degrees.
  2. Slice the tomatoes into 1/2 inches thick slices, put aside.
  3. Slice the zucchinis thinly lengthwise, put aside.
  4. Oil the baking dish.
  5. Place a layer of sliced tomatoes on the base of the baking dish.
  6. Salt and pepper the tomatoes to taste.
  7. Place a layer of zucchini on top of the tomatoes.
  8. Sprinkle the almond flour and parmesan across the top.
  9. Drizzle or spray with olive oil and place in oven.
  10. Bake for up to 20 minutes until golden.
