Ingredients
- 4 medium firm tomatoes
- 4 medium zucchini
- Salt and pepper to taste
- ½ cup almond flour
- ⅓ cup grated/shredded parmesan cheese
Direction
- Pre-heat the oven to 350 degrees.
- Slice the tomatoes into 1/2 inches thick slices, put aside.
- Slice the zucchinis thinly lengthwise, put aside.
- Oil the baking dish.
- Place a layer of sliced tomatoes on the base of the baking dish.
- Salt and pepper the tomatoes to taste.
- Place a layer of zucchini on top of the tomatoes.
- Sprinkle the almond flour and parmesan across the top.
- Drizzle or spray with olive oil and place in oven.
- Bake for up to 20 minutes until golden.
