Clean Eating and Keto Recipe - Grilled Lemon Dijon Chicken

My family and I eat a lot of chicken. The kids like it and it's easy and quick to make. So I'm always on the hunt for new chicken recipes to try. We tried this Grilled Lemon Dijon Chicken recipe last night and everyone gave it thumbs up. I love that it can be prepared the night before, so it takes less than 20 minutes to make.

Serve the chicken with a salad or steamed vegetables.

Ingredients

  • 4 chicken breast
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 2 tbsp grainy Dijon Mustard
  • 1 tbsp herbs de Provence
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 chopped shallot
  • Large Ziploc bag
  • Fresh sliced basil for garnish (optional)

Directions

  1. Rinse off chicken with water and pat dry.
  2. Place the chicken in a Ziploc bag.
  3. Add all ingredients into bag and mix well (shake and massage it until all ingredients are mixed).
  4. Place the bag in the fridge. You can leave it there for a couple of hours or overnight.
  5. Grill the chicken on the grill or in a grill pan on the stove. Cook each side for about 6-7 minutes or until fully cooked.
  6. Serve with a salad or steamed vegetables.
