LCHF and Clean Eating recipe - Feta Cheese Meatballs with Parmesan Cauliflower

This is a great meal when you want to add something new and exciting to your usual weekly menu. The two dishes are packed with flavor and nutrition.

Feta Cheese Meatballs with Parmesan Cauliflower

Ingredients

  • 14 oz (400 g) ground beef
  • 4 oz (115 g) crumbled organic feta cheese
  • 2 tsp dried oregano
  • 2 garlic cloves, peeled and crushed
  • 2 oz (60 g) full-fat Greek yogurt
  • A head of fresh Parmesan
  • Shredded Parmesan cheese

Directions

  1. Combine all ingredients in a large bowl.
  2. Mix well with your hands until the mixture is well mixed.
  3. Form into balls  of your preferred size and place them on a plate.
  4. Pre-heat the oven to 350 degrees.
  5. Cut up and rinse the cauliflower. 
  6. Pat dry the cauliflower with some papertowel and spread the pieces out on a baking sheet.
  7. Sprinkle the cauliflower with shredded Parmesan cheese. Place in oven and cook until the cheese is melted and the cauliflower has gotten some color.
  8. Meanwhile, cook the meatballs in a skillet in butter or in olive oil. Cook them on low heat and not too long since they might turn out dry. Check the inside to ensure they are fully cooked.
  9. Serve the meatballs with the cauliflower.
