Clean Eating and LCHF recipe - Shrimp and Avocado Salad

This is one of my favorite LCHF meals. Probably because shrimp and avocado are two of my favorite foods, but also because it's so filling. This is also a great meal to prepare ahead of time, since the longer you marinade the shrimp the more flavor it gets. Enjoy!

Shrimp and Avocado Salad

2 servings

Ingredients (dressing/marinade)

  • 3 tbsp fresh lime juice
  • 2 tbsp extra virgin olive oil
  • ½ cup chopped fresh cilantr
  • Pepper and salt to taste

Direction

  1. Combine all ingredients in a bowl and mix well.

Ingredients (salad)

  • Cilantro dressing
  • 1 lb cooked shrimp (deveined and tail removed)
  • 2 ripe avocados
  • 4 cups lettuce or baby greens
  1. Place the shrimp in a bowl (make sure the shrimp is dry)
  2. Pour cilantro dressing/marinade over the shrimp
  3. Stir to coat.  Cover and refrigerate for at least 1 hour (the longer the better).
  4. Wash and dry the lettuce Divide the lettuce among the plates.
  5. Cut avocado into chunks.  Sprinkle over the lettuce.
  6. Top with marinated shrimp and leftover dressing.
