I sometimes have these warm gooey tomatoes as a snack, but most of the time we have them for dinner with steaks. It's a delicious combo. You can try to make them with different kind of cheeses as well.
Ingredients
- Tomatoes (make as many as you are going to eat)
- Olive oil
- Crumbled feta cheese (1 cup for 8 tomatoes)
- Parsley to taste
- Salt and pepper to taste
Directions
- Preheat the oven to 400 degrees
- Slice off the top of each tomato (about 1/2 inch down from the stem) to make caps. Set the caps aside.
- Using a spoon, scoop out the flesh out of each tomato.
- Grease a glass baking pan lightly with olive oil and space out the tomatoes with the openings facing up.
- Mix the feta cheese with a couple of pinches parsley.
- Stuff the mixture into the tomatoes.
- Put on the lids on the tomatoes and sprinkle with salt and pepper.
- Drizzle the tomatoes with a little bit of olive oil.
- Place the pan in the oven and bake for about 10 minutes, or until the tomatoes are soft and the cheese melt.
