LCHF and Ketogenic recipe - Asparagus and tomato salad

.This week's Summer salad - asparagus and tomato salad. A refreshing vegetarian salad.

Ingredients • 1/2 cup chopped asparagus • 2 cups baby spinach • 1 cup arugula • 16 black olives, pitted and cut in half • 4 ripe tomatoes • 1/4 cup toasted pine nuts

Dressing • 2 tbsp olive oil • 2 tsp lemon oil • 1 tsp whole-grain mustard • 4 tbsp balsamic vinegar • Salt and pepper to taste

Directions 1. Steam the asparagus until al dente. Cut them into 2-inch pieces. 2. Rinse and chop the tomatoes into large chunks. 3. Cut the olive in half. 4. Place all ingredients in a serving bowl. 5. Make the dressing; mix all ingredients in a small bowl and whisk it together. 6. Pour it over the salad and mix well. 7. Serve it.

Since LCHF includes beef, poultry, seafood, dairy, vegetables, berries, and nuts, your body gets lots of vitamins and nutrients.

Taco Quiche

• Olive oil • Butter • 1 pound beef • 1 bag taco mix (pick one without sugar!) • 1 cup sour creme • 8 oz cream cheese • 1 yellow onion • 1 tomato • 1 garlic clove • 2 cups shredded cheese • A bag of lettuce

Directions 4. Pre-heat the oven to 390° degrees. 5. Heat up a pan on high heat and add some olive oil. 6. Add the ground beef and cook fully. 7. Add the taco mix, stir and add some water. Stir and cook for a couple of more minutes. Put aside. 8. Chop the onion and fry it in some butter until transparent. 9. Mix the ground beef with the onion and spread it out in an oven-safe pan. It should be about 1 inch thick. 10. Mix the sour creme and cream cheese in a separate bowl. 11. Spread the mix over the ground beef until it's spread evenly. 12. Sprinkle the cheese over the cream cheese mixture. 13. Slice the tomatoes and place them on top of the cheese. 14. Place in the oven and cook until the cheese is melted and started to get color. 15. Serve with the lettuce.
