LCHF and Keto thick pancake

This LCHF and Keto thick pancake is a favorite dinner dish in Sweden. Actually, Thursday is pancake-and-soup dinner day in Sweden. My family and I enjoyed this pancake last night, so we didn't wait until Thursday, but it was very delicious regardless. Serve it with berries or whip cream.

Ingredients

  • 4 eggs
  • 1 cup heavy cream
  • 1/2 cup water
  • 2 tbsp psyllium seed husks
  • A pinch of salt
  • 1/2 packet of bacon

Directions

  • Turn on the oven at 425 degrees.
  • Mix all ingredients well and let sit for 5 minutes.
  • Chop the bacon and fry it.
  • Spread out the bacon in a medium pan and pour the mixture over it. The mixture should be about 1/2 high in the pan.
  • Place in the oven for about 20  minutes and until  cooked.
