It doesn't get easier than this Pasta with Chicken Sausage and Broccoli recipe! This is one of my favorite recipes for busy nights where there isn't enough time for cooking. Since I eat LCHF I just add more broccoli to my plate and skip the pasta. Yum!

Ingredients
- 12 ounces rigatoni (about 4 1/2 cups)
- 1 tbsp olive oil
- 1 onion
- 6 oz fully cooked chicken sausage links
- 1 small head broccoli
- ¼ cup grated Parmesan
Directions
- Slice the onion.
- Slice the sausage.
- Cut the broccoli into florets and slice the stems.
- Cook the pasta according to the package directions. Drain.
- Meanwhile, heat the oil in a large skillet over medium-high heat. Cook the onion, stirring often, for 3 minutes.
- Add the sausage and cook, stirring, until browned, 2 to 3 minutes.
- Add the broccoli and 1 ¼ cups water and simmer, covered, until the broccoli is tender, 5 to 6 minutes.
- Toss the pasta with the sausage mixture, including any remaining liquid, and the Parmesan.
