Directions

1.      Chop the bacon coarsely and set aside.

2.      Heat up a frying pan on the stove on high heat.

3.      Meanwhile, whisk eggs, cream, salt, and pepper together in a bowl.

4.      Add butter to the pan and let melt a little.

5.      Add the bacon to the pan and fry until crisp.

6.      Turn down the heat and add the egg mixture.

7.      Keep on stirring the mixture until the eggs are cooked.

Boiled Eggs with Butter

Ingredients

Directions

1.      Put the eggs in a pot and fill with water just to cover the eggs.

2.      Once the water is boiling, cook the eggs for about 6-8 minutes depending on desired consistency.

3.      Remove the pot from the stove and put it in the sink. Turn on the faucet with cold water and let it pour over the eggs for a couple of minutes until the eggs and pan are cold.

4.      Peel the eggs and put them in a small bowl.

5.      Place a couple of tablespoons of butter on the eggs.

6.      Using a fork mash the eggs into pieces and mix them with the melted butter until smooth.

7.      Sprinkle with salt to taste.

Directions

1.      Crack the eggs in a bowl and mix with a fork.

2.      Mix all the dry ingredients in a separate bowl and add the eggs little by little while whisking with an electric whisk.

3.      Add the milk and cream.

4.      Let the mixture stand for a couple of minutes. If it thickens too much you can add a little bit of cream.

5.      Fry the pancakes in butter or coconut butter in a large pan over medium heat.

6.      The pancakes are supposed to be very thin, like a crepe. You should use approx. ¾ cup for each pancake if you use a large pan.

7.      Serve with whipped cream and strawberries (optional).

·         2 cups vegetable stock

·         2 garlic cloves

·         2 tbsp. tomato paste

·         Salt and pepper to taste

·         1 cup crumbled feta cheese

·         8 oz. sour cream

 

 

Directions

1.      Chop the tomato and onion finely.

2.      Finely chop the garlic.

3.      Heat up a large pot on medium heat and add the olive oil.

4.      Add the tomato, onion, and garlic and cook for a couple of minutes.

5.      Add the crushed tomatoes and tomato paste, and mix.

6.      Let simmer for about 7-8 minutes.

7.      Add the stock, salt, and pepper.

8.      Let simmer for an additional 10 minutes.

9.      Meanwhile, in a bowl, mix the feta cheese and sour cream, using a fork or mixer. Set aside in the fridge.

10.  Once the soup has simmered for 10 minutes, blend the soup smooth using a mixer.

11.  Cook for another 5 minutes.

12.  Serve the soup in a bowl with a dollop of the feta cheese cream.

Green Bean Salad with Blue Cheese, Bacon, and Pecans

·         ½ pound of green beans

·         5 pieces of bacon

·         3.5 oz. crumbled blue cheese

·         ¼ cup pecans

1.      Rinse the beans and cut off the ends.

2.      Set a pot of water to boil. Add green beans to boiling water and boil for 2 minutes.

3.      Rinse the beans with cold water or put them in a bowl with ice cubes to cool down.

5.      Chop the bacon and set aside.

6.      Meanwhile, heat up a frying pan on medium heat.

7.      Add the bacon and fry until crisp.

8.      Place the bacon on some paper towels on a plate to drain excess fat.

Pasta Salad with Sun-dried Tomatoes, Olives, and Feta Cheese

Pasta

·         4 eggs

·         4 oz. cream cheese

·         3 1/2 tbsp. psyllium seed husks

·         1 tsp. salt

 

Dressing

·         1 garlic clove

·         1/2 tsp. salt

·         1 1/2 tbsp. white wine vinegar

·         3 tsp. olive oil

 

Salad

·         1/2 cup sun-dried tomatoes

·         1/2 cup crumbled feta cheese (full-fat)

·         1 tsp. dried thyme

·         1/2 cup kalamata olives

·         2 cups arugula

·         1/4 cup fresh basil


Directions

1.      Preheat oven to 250°F.

2.      Slice the sun-dried tomatoes coarsely and put aside.

3.      To make the pasta; in a bowl, whisk the eggs until fluffy.

4.      To the eggs, mix in the cream cheese and the husk and let the mixture rest for 5-10 minutes until it thickens a little.

5.      Mix all the dry ingredients in a big bowl.

6.      Place a sheet of parchment paper on a baking sheet.

7.       Pour the pasta mixture onto the parchment paper. To spread the dough easier, place a piece of plastic wrap over the dough and use a rolling pin to roll out the dough until it covers the entire sheet. Remove the plastic wrap.

8.      Place the dough in the oven and bake for about 10 minutes.

9.      Take out the pasta and let cool.

10.  Cut the pasta into pieces (size as desired). The pasta can be made in advance and placed in the fridge or freezer.

11.  To make the dressing; crush the garlic clove.

12.  Mix the vinegar, salt, and garlic in a bowl and let stand for about 15-30 minutes.

13.  Remove the garlic from the mixture and add the olive oil. Set aside.

14.  To make the salad; mix the pasta and dressing.

15.  Add the sun-dried tomatoes and olives.

16.  Add the thyme, salt, and pepper.

17.  Add the feta cheese and arugula, and mix.

18.  Place the basil leaves on top and serve.

Chicken Salad with Lettuce Wraps

·         1/4 cup psyllium seed husks

·         2 cans tuna fish

·         1/2 cup mayonnaise

·         1 bunch fresh dill

·         1/2 tsp. lemon juice

·         Salt and pepper to taste

 

Directions

1.      Preheat oven to 300°F.

2.      Chop the dill finely and set aside.

3.      Whisk the eggs until fluffy.

4.      Add the cream cheese, psyllium seed husks, and salt.

5.      Whisk until the mixture is smooth.

6.      Let sit for 5 minutes and then whisk one more time.

7.      Place two sheets of parchment paper on your kitchen counter.

8.      Pour a little bit of oil on each sheet and spread it out with your hands.

9.      Pour 1/2 cup of the mixture on one of the sheets and then place the other paper on top of the mixture, oil-side down.

10.  Use a rolling pin to roll out the mixture until you have a thin wrap.

11.  Place the wrap with parchment sheets on a baking sheet.

12.  Once you've done this with all of the mixture (you will get about 4 wraps), place the pan in the oven and bake for about 10 minutes.

13.  Meanwhile, drain the tuna and mix it with the mayonnaise in a bowl.

14.  Add the dill, lemon juice, and a little bit of pepper, and mix.

15.  Divide the tuna onto the wraps, roll them up, and serve.

·         4 red or green peppers

·         1 2/3 pounds of ground beef

·         1 yellow onion

·         Butter or coconut oil for frying

 

Directions

1.      Preheat oven to 400°F.

2.      Chop the onion finely and set aside.

3.      Heat a pan on high heat and add the butter.

4.      Add the ground beef and onion and fry for a couple of minutes.

5.      Add the onion, water, and taco mix, and continue cooking for a couple of minutes.

6.      Meanwhile, rinse and clean the peppers.

7.      Cut them length-wise and clean out the insides.

8.      Place them on a baking sheet covered with parchment paper.

9.      Fill the peppers with the ground beef mixture.

 

10.  Mix the cream cheese and cheese and put some on top of each pepper.

11.  Bake the peppers for about 10 minutes. Serve immediately.

Meatloaf with Cabbage

Ingredients

 

·         Butter

·         1 yellow onion

·         4 sun-dried tomatoes

·         A small bunch of parsley

·         2 eggs

1/2 cup heavy cream

·         1 1/4 pound of ground beef

·         1/2 head of cabbage

·         1 cup heavy cream (for the sauce)

 

Directions

1.      Preheat oven to 350°F.

2.      Meanwhile, finely chop the onion.

3.      Finely chop the sun-dried tomatoes.

4.      In a bowl, mix the onion, tomatoes, eggs, cream, and ground beef using your hands.

5.      Chop the parsley finely and add to the mix.

6.      Add salt and pepper to taste and mix well.

7.      Form the mixture into a loaf and put it in an oven-safe dish.

8.      Place in the oven and let cook for about 30-40 minutes, or until it’s cooked.

9.      Heat a pan and add the butter.

Directions

1.      Slice the sun-dried tomatoes coarsely and set aside.

2.      Chop the basil leaves and set aside.

3.      Heat a large pan on medium heat.

4.      Slice the chicken coarsely.

5.      Add the butter to the pan.

6.      Cook the chicken until fully cooked.

7.      Add the sour cream and sun-dried tomatoes. Stir.

8.      Add salt and pepper.

9.      Meanwhile, finely shred the cauliflower.

10.  Add it to a microwave bowl and microwave on HIGH for about three minutes.

11.  Toast the pine nuts on a dry pan in the oven for a couple of minutes. Sprinkle them on top of the cauliflower rice.

·         1 can (12 oz.) crushed tomatoes

·         1/2 cube beef bouillon

·         1 1/2 cups sour cream

·         2 tbsp. french mustard

·         Salt and pepper to taste

·         Head of cabbage

 

Directions

1.      Slice the beef into strips and set aside.

2.      Chop the onion and garlic finely and set aside.

3.      Drain the mushrooms.

4.      Heat a pan on medium heat and add some butter.

5.      Add the beef, onion, garlic, and mushrooms to the pan and fry until they get a little bit of color.

6.      Pour the mixture into a large pan.

7.      Add the crushed tomatoes, tomato paste, sour cream, and mustard. Stir.

8.      Crumble the bouillon cube on top, and mix well until it dissolves.

9.      Add salt and pepper to taste.

10.  Let simmer for about 15-20 minutes.

11.  Meanwhile, shred the cabbage.

·         1 head of lettuce

·         Sliced mozzarella cheese

·         Mayonnaise

·         Salt and pepper to taste

 

Directions

1.      Break off lettuce leaves, rinse, and set aside to dry.

2.      Rinse the tomatoes and slice them. Set aside.

3.      Slice the avocado and set aside.

  1. Place ground beef in a large bowl and season with salt and pepper to taste.
  2. Mix the salt and pepper into the meat and form patties to your desired size and thickness (the thinner the patties, the quicker they will cook and higher the chances that your burger will dry out when cooked).
  3. Heat up a frying pan on medium pan and add butter.
  4. Add the burger patties and fry for about 3 minutes on each side, or until desired doneness.
  5. Place the cheese on the patties for the last minute.
  6. Place cooked burger on leaf of lettuce, top with tomato, avocado slices, and mayo. Wrap lettuce leaf around entire burger.

Taco Quiche

·         1 packet taco mix (pick one without sugar)

·         2 cups shredded cheese

·         A bag of lettuce

 

Directions

1.      Preheat oven to 350°F.

2.      Heat a pan on high heat and add some olive oil.

3.      Add the ground beef and cook fully.

4.      Add the taco mix, stir, and add some water. Stir and cook for a couple more minutes. Set aside.

5.      Chop the onion and fry it in some butter until transparent.

6.      Mix the ground beef with the onion and spread it out in an oven-safe dish. It should be about 1-inch thick.

7.      Mix the sour cream and cream cheese in a separate bowl.

8.      Spread the mix evenly over the ground beef.

9.      Sprinkle the cheese over the cream cheese mixture.

10.  Slice the tomatoes and place them on top of the cheese.

11.  Place in the oven and cook for about 15-20 minutes, or until the cheese is melted and starting to get color.

·         1 package frozen spinach

·         1 vegetable bouillon cube

Directions

1.      Boil the 2 eggs and set aside.

2.      Meanwhile, slice the scallion and set aside.

6.      Add the garlic and spinach.

7.      Turn down the heat and fry for about 5 minutes.

8.      Crumble the bouillon cube and add it to the pan.

·         3.5 oz. cream cheese

·         3 eggs

·         1/2 tsp. baking powder

 

·         1/2 tbsp. psyllium seed husks

·         Salt to taste

·         Optional: Sea salt, sesame seeds, poppy seeds, crushed almonds, sunflower seeds, etc.

 

Directions

1.      Preheat oven to 300°F.

2.      Separate the eggs into two bowls.

3.      Add the salt to the egg whites and whip until very firm.

4.      Add the baking powder and psyllium seed husks and whip again.

5.      Add the cream cheese to the egg yolks and mix until smooth.

6.      Gently fold the egg yolks into the egg white mixture, trying to keep the air in the egg white mixture.

7.      Place parchment paper on a baking pan and pour about 7 (depending on desired size) portions/breads on the paper.

8.      Optional: Sprinkle the bread with a topping such as sea salt or sunflower seeds before baking.

9.      Place in the middle of the oven and bake for about 20-25 minutes, until they are golden brown.

·         1 1/2 tbsp. cold strong coffee

·         1/4 cup 70% cacao dark chocolate

 

Directions

1.      Pour 1 cup of shredded coconut onto a plate and set aside.

2.      Place butter, hazelnuts, 1 1/2 cups of shredded coconut, and vanilla powder in a bowl and set aside.

3.      Melt the chocolate in a glass bowl in the microwave (watch it to ensure it doesn't burn).

4.      Mix the cream, chocolate, and coffee using an electric mixer for about 4 minutes until smooth.

5.      Pour the chocolate mix into the bowl with the other ingredients and mix it all together using your hands.

6.      Using your hands, roll small 1-inch balls and then roll them in the coconut on the plate to cover them all over.

Directions

1.      Whip the cream and salt until very firm, for about 8-10 minutes. It will start looking like butter.

2.      Place the butter in a fine mesh strainer. You can also use a coffee filter.

3.      Let the butter sit for about 10 minutes to remove excess water.

4.      Push the butter down into the strainer or filter to remove more water.

5.      Fill a large bowl with cold water.

6.      Hold the butter down into the cold water and massage and push on the butter to remove more liquid from the butter. Repeat this process in new water until the water doesn't become muddy any more.

7.      Remove the butter and dry it off a little with a towel.

8.      Add more salt to taste (if needed).
